  1. Primero debemos elaborar el poolish (prefermento) un día antes. Para ello mezclaremos 200 gramos de harina panificable, 200 ml de agua y 10 gramos de levadura prensada. Reservaremos el poolish en la nevera hasta el día siguiente, el cuál sacaremos una hora antes de elaborar el pan para que atempere.
  2. Comenzamos a elaborar el pan de Reyes, mezclando todos los ingredientes excepto la mantequilla y el polvo de especias chinas. Nos debe quedar una masa pegajosa nooo, lo siguiente 😂. Una vez la tengamos dejaremos reposar 20 minutos.
  3. Pasado el tiempo de reposo incorporamos la mantequilla pomada y el polvo de especias chinas. Incorpora bien y amasa durante 5 minutos.
  4. Deja reposar la masa 10 minutos tapada con el bol y vuelve a repetir otros 5 minutos de amasado.
  5. Cuando hagas el segundo amasado, bolla y pon la masa en un bol previamente untado con aceite y tapado. Deja fermentar 30 minutos.
  6. Pasada la fermentación nuestra masa habrá duplicado su tamaño.
  7. Pon un poco de aceite en la mesa de trabajo y pliega la masa de arriba a abajo y viceversa. Luego de izquierda a derecha y viceversa, como si formases un sobre.
  8. Dale la vuelta para que los pliegues queden abajo y alarga la masa para dar forma al pan. Coloca el pan sobre una bandeja de horno a la cuál habremos puesto papel vegetal.
  9. Da una mano de doradura con huevo líquido y deja reposar 20 minutos.
  10. Mientras ve preparando todo lo necesario para decorar el pan. Para hacer el azúcar granulado tan sólo tenéis que coger azúcar y humecerla con unas gotas de agua. Precalienta el horno a 180 grados.
  11. Pasado el tiempo de reposo vuelve a dar otra mano de doradura y comienza a colocar todos los ingredientes presionando con cuidado de no desgasificar la masa.
  12. Con el horno caliente hornea durante 25 minutos y listo.
